The web is always ready to surprise us with some brilliant ideas that make us see things from a different, and often amusing, perspective. This also happens in the kitchen, when some tricks to prepare a well-known dish go viral and then many try their hand at some new trend. This is also the case with the so-called "Tornado Omelette", (also called "Tornado Eggs" or "Volcano Omelettes").

These evocative names are due to the appearance that is given to a simple omelette (or pancake, if you like), while cooking it in a pan: there are only some simple actions to learn (and perhaps at the expense of an omelette or two) to shape the egg mix during cooking into the form of a vortex.

What is needed? Nothing that you do not already have at home or cannot easily find: your trusted pan for omelettes and a pair of chopsticks - the ones used for eating Asian foods - preferably made of wood to avoid any problems with the pan's non-stick coating.

It starts off as with a normal omelette. The technique is very similar to cooking a regular omlette and you may think there is no more to this. But this is not correct: a traditional omelette is cooked on both sides and often, in addition to the eggs, includes other ingredients (such as milk or even grated cheese). The tornado omelette is made only of eggs (beaten as much as possible with a pinch of salt) and is cooked only one side in order to remain creamier. Since one of the hallmarks of these Tornado Omelettes is the fact that they remain partly creamy, we cannot exactly call them omelettes. So here's how to proceed to prepare them.

  • Beat the eggs with a pinch of salt, trying to incorporate as much air as possible so that the omelette is very soft.
  • Heat some oil in the pan until it is hot.
  • Pour the beaten eggs into the pan.
  • Wait just a few seconds with the chopsticks ready in your hand, for the first skin to start to form on the bottom of the pan.
  • Place each of the sticks close to the opposite edges of the disc that is forming and move them at the same time towards the center, without coming to join them, leaving a few centimeters between them.
  • Grab the handle of the pan with the other hand and start turning the pan keeping the chopsticks still: small movements, rotating always in the same direction.
  • You need to make sure that the egg, while it continues to cook, slowly takes the shape of a vortex around the chopsticks.
  • Continue until you have cooked all the omelette - which will remain moist on the top - and then you can serve.

Since "tornado eggs" take the shape of a cone (which is why many also call them "volcano omelettes"), they are not flat omelettes, and they are perfect for topping for some other food like maybe a little bit of rice (or any other dish you like to pair with eggs or omelettes).
