Dark chocolate cake: a simple dessert, ready in just a few steps

There is nothing that can cheer you up like a little chocolate can, and even better if it is the predominant taste of an appetizing dessert. There are many types of chocolate cakes to try and enjoy, and the one we suggest below is a simple but full of flavor recipe that can seduce almost everyone.

Easy to prepare, this dark chocolate cake is unique for its texture: it melts in your mouth, a bit like a chocolate, and the uniqueness is the use of slightly salted butter for a very special taste. A sinful pleasure to be enjoyed regardless of calories!

Ingredients for 8 people:

  • 200 grams of dark chocolate
  • 130 grams of lightly salted butter (or you can also use the normal butter you prefer, with the addition of a pinch of salt)
  • 100 grams of sugar
  • 3 eggs
  • 80 grams of 00 flour (for a gluten-free option, buckwheat is fine)

How to prepare the dark chocolate cake

  • Turn on the oven to 180 degrees C (360 F).
  • Melt the chocolate with the butter in a double boiler / bain-marie (then add the salt in this step, if you used unsalted butter).
  • Mix until smooth and silky, then leave to cool.
  • Meanwhile, beat the egg yolks with the sugar, whipping them until the mixture is frothy and clear, with the sugar perfectly dissolved.
  • Whip the egg whites separately until stiff peaks are formed.
  • If the butter and chocolate sauce is cold enough, add it to the whipped egg yolks. If it is too hot it will cook them, so be careful.
  • Add the egg whites trying not to let them separate. Then incorporate them using circular movements and using a spatula.
  • Add the flour (preferably using a sieve to avoid lumps) and mix all the ingredients together well.
  • Pour into a pan that you have greased and floured or lined with parchment paper. Use a 16 cm diameter pan. You can also choose a smaller one to get a taller cake, and vice versa, in a larger one the cake will be lower, but it will cook even faster.
  • Bake for 20 minutes, or until inserting a toothpick in the center comes out dry. However, you may prefer that the cake remains a little softer: it's a matter of taste and experimenting!

Once cooled enough, the cake is ready to taste. Some additionally advice:

  • This cake goes well with sauces (including salted caramel), red fruit coulis or apricot coulis. But you could also combine it with exotic fruits such as passion fruit or mango. Or accompany it with ice cream!
  • You can sprinkle it with powdered sugar or coconut flakes before serving.
  • The mixture, before being poured into the pan, can be flavored with rum (or even with honey!) or Grand Marnier (or Cointreau). But you could experiment with other liqueurs. And of course you could add some spice you like along with the chocolate like ginger, cinnamon or vanilla.
  • You could serve it with strawberry slices on top.
  • You could also add chopped hazelnuts or other nuts to the mixture.
  • If you like, you can add coconut flour, slightly decreasing the amount of the 00 flour used.
