This makes cast iron utensils perfect for cooking various types of food, especially meat and vegetables. And they can be used both on the stove and in the oven.

A fundamental feature of cast iron skillets is their "seasoning": their shiny, oily surface layer which must be kept intact and keeps them non-stick. To preserve this seasoning, proceed as follows:

  • Wash with soap and hot water: contrary to what many say, detergents can be used safely to wash cast iron pans. The important thing is not to overdo the scrubbing and use warm water and a soft, delicate sponge. If you wash the cookware immediately after use, you should have no problems later.
  • Dry carefully: once washed, the cast iron cookware item should be dried thoroughly. Do this with kitchen paper or a dry cotton tea towel, making sure not to leave a any water on the surface, as this could create rust.
  • Greasing after drying: if you really want to keep the seasoning of the item intact, pass a cotton disk or a sheet of kitchen paper soaked in olive oil over it (sesame seed or coconut oil will do too).

  • Do not use abrasive sponges: it is an absolute no-no to use any type of rough or abrasive sponge or steel wool on the surface of a cast iron item.
  • Do not leave the item to soak: soaking cast iron will cause rust to develop very quickly.
  • Avoid using the dishwasher: never put your cast iron pots and skillets in the dishwasher, and only wash them by hand, following all the instructions given above.
